LALITHA APPA Rao: Looking for home cooked authentic Andhra cuisine for your next party? Or maybe just an authentic Andhra dish to enliven your meal? All you have to do is give Lalitha a day's notice and she'll cook up the dish or a full meal. And she'll do it with fresh hand-picked ingredients and true-blue Andhra recipes from the royal family her mother hails from. Married to the son of the rajkumar of Sivaganga, Lalitha takes time off from her busy life to nurture her culinary passion! And what culinary delights! She limits her repertoire to ten dishes.., so that she can make them well and with care. If you ask me to recommend a dish of hers, I'd suggest official name is "Mamsam podigura". but I like to call it a sonnet or maybe a lyric! It's full of unbridled chutzpah, It's shredded mutton, crisply fried with poppy seeds and cardamom. Even the "Gongura mutton" with its flavours of garlic and ginger offset by gongura (rozelle) leaf paste is a delight. I fell in love with the unusual colocasia fry, yam curry and spinach. Lalitha also makes "Chicken igaru" and "Fish pulusu" and biryanis, but I still have to try those. Right now, I am dreaming of karvepaku podi (dried and pounded curry leaves, black gram, coriander and cumin seeds), which adds pep to rice mellowed by pure ghee! A must try.
